It’s no secret to the people who know us that we are painfully into coffee. Roasting, brewing, tasting, our mates laugh at us while we swirl our glasses and talk about the refreshing acidity of a washed Kenyan or the intriguing fruitiness of a natural Colombian.
Nestled in NSW’s Southern highlands is our small-batch roastery. Most weekends you will find us, roasting, brewing, cupping, scoring, discussing, thinking, planning, dreaming, sourcing and even arguing about coffee.
Matt’s coffee adventure began at age 12 with a cup of ‘Moccona Classic Number 5’. This early experience ignited a passion for coffee (Let’s be honest, caffeine). The world of specialty coffee opened up to him with a $99 home espresso machine purchased in a black Friday sale, beginning the entire transformation of his coffee experience
Today, Matt is a connoisseur of pour-over, long ratio espresso, and the occasional cheeky latte. He has a particular fondness for beans from Rwanda, Ethiopia, Nicaragua, and Colombia. While he leans towards natural coffees, he always appreciates the elegance of a well-crafted washed coffee.
Rob’s coffee journey began with an Aeropress in hand, savouring the rich flavours of dark roast brews. His love for coffee from El Salvador and Kenya has always been a driving force in his exploration of the coffee world. Rob is known for pushing the envelope with experimental roast profiles, constantly innovating and designing new tools for the coffee roasting trade.
Rob has a new passion for things filter coffee. Each morning, you can find him tinkering with a new brew recipe or dripper, always striving to perfect his craft and share his love for exceptional coffee with others.
